Yes, you can use a server motherboard in a desktop... and windows 7 professional and ultimate you can have two physical processors (also no limit on the cores as I understand it, so you could have two quad cores if you wanted) and up to 128 GB RAM on the 64-bit edition (which Id suggest).

Hope that answers it for you.

other than multiple CPU's is there a reason for getting a server mobo? are you planning on getting xeon CPU's or something or just plan to run it into the ground?

A server is a computer designed and configured for handling multiple users at the same time and "serving" services (www, ftp, shoutcast radio). Which means that the hardware for a server is fine tuned for not a single user behind the box (in fact, the administrator is also a connecting user), but many. This means a server usually has a minimal video card but faster disks and memory, multiple network interfaces and a system running that fits the serving part. Adding funky hardware doesn't make a machine a server. It is the services that makes it a server.

If you really want to push up your techie nerdie skills, try a UNIX or clone (Linux) instead of windows server.

Sure, now that Solaris is owned by Oracle things are sure to go great!

Ubuntu is a great Linux distribution for beginners. I've also heard great things about Arch for being extremely easy to setup although I'm not sure about it's multiple processor support.

EDIT: Ubuntu does support SMP (Symmetrical processing), still can't find anything about Arch and multiple processor support.
